BREAST CANCER AWARENESS MONTH

Our hearts go out to the many women and men who have experienced breast cancer. We wish you successful healing and we hope that our younger sisters and brothers can live healthy lives free of this or any disease. Modern life and foods have created much sickness. We can do so much to prevent disease and realize wellness.

Many positive strides have been taken in research and recommendations. The American Cancer Society's estimates for breast cancer in the United States for 2022 are:

• About 287,850 new cases of invasive breast cancer will be diagnosed.

• Breast cancer is the second leading cause of cancer death.

HEALING and DELICIOUS AUTUMN FOODS

We change our clothing as the temperatures cool. Also as the weather changes seasonally, we can adjust our cooking to create greater balance and vitality.

Lino often says, “Eating and drinking cold foods in cold weather is like wearing a bathing suit in a snow storm!” Br-r-r! If you live in a cooler climate, it is healthy now to have more warm soups, stews, and beverages along with salads and refreshing dishes.

Every season has special organs that require our attention. The central body organs that we are cooking for in early autumn are:

The Spleen, Pancreas, and Stomach

These Earth organs influence many vital body systems and functions including: Blood Sugar, (Diabetes and Hypoglycemia,) Lymph, Sweet Cravings, Digestion, Water and Blood Storage, as well as Vein, Menstrual, and Reproductive health.

We include five organic recipes below to nourish these organs and to comfort and soothe you to your core, as the weather turns cooler. These special dishes served together create a delicious brunch but also may be used any time of day or season of the year! See our MENU below.

 

ENHANCE YOUR HOLIDAY FEASTS

 

A DELICIOUS AND HEALTHY BRUNCH

 

SWEET and CREAMY SQUASH SOUP

An incredibly sweet, simple, and soothing soup...golden and satisfying…a perfect beginning to any Autumn or Winter meal. Choose organic food. Serves 4-6.

2 cups sweet winter squash,* seeded, peeled and cubed

1 cup yellow onions, peeled and cubed

3 cups spring or filtered water

2 cups almond milk, unsweetened

1 Tablespoon plus 2 teaspoons white miso, or to taste

Sprigs fresh parsley for garnish- one each bowl.

• Place squash and onion in a pot with water.

• Bring to boil, reduce heat, and simmer covered 20 minutes, or until vegetables are tender.

• Puree with hand held blender or keep it chunky.

• Add almond milk. Stir well.

• In a cup, dissolve miso in a small amount of broth.

• Stir miso in soup.

• Simmer 3 minutes. Stir again.

• Serve soup warm.

• Garnish with Toasted Pumpkin Seeds or the Pumpkin Seed Scallion Topping (below.)

* Use: Kabocha, Hokkaido, Buttercup, or Butternut Squash (Peel for golden color soup. Otherwise the skin is often tender to eat.)

 

PUMPKIN SEED - SCALLION TOPPING

Pumpkin seeds are high in zinc, iron, selenium, and protein; excellent for blood sugar, fertility, heart health and sleep. Use this scrumptious roasted pumpkin seed sauce as a topping on squash soup, pasta, salad, or whole grain. Easy to find salted ume plum alkalinizes the blood and aids digestion. Adjust the seasoning to your preference.

(Recipe for Toasting Seeds is below.)

1 cup raw pumpkin seeds, rinsed and lightly toasted* (see below)

2 teaspoons umeboshi vinegar or ½ tsp. ume paste

2 Tablespoons scallions, minced

1 Tablespoon lemon juice (careful to remove seeds)

1 teaspoon brown rice syrup or maple syrup

Boiled water or vegetable cooking broth

Garlic (optional) - 1-2 cloves or 1/4 teaspoon granules.

• Grind toasted* seeds finely in food processor/blender.

• Add ume, scallion, lemon juice, and syrup; continue grinding well.

• Drizzle in water/veggie broth slowly and grind until you reach the consistency you desire. Sauce is medium thick.

• Add garlic to taste (one or two cloves or ½ teaspoon garlic granules)

• Grind well until smooth. Adjust seasonings for you.

• Serve as a sauce or dip or as pasta “pesto”

• In above recipe, after soup is in the bowl, add one teaspoon of this sauce on top and swirl it (use a chopstick or skewer) in a design on top.

• Refrigerate leftovers in a glass jar with lid.

* TOASTING PUMPKIN SEEDS - 2 Methods

Rinse one to two cups seeds and drain well. Place seeds into a skillet or on a rimmed metal baking sheet:

SKILLET: Turn on heat to medium. With a wooden spoon, move the seeds continually around the pan until the seeds are dry. Reduce heat to low and continue stirring the seeds until they are light brown and crunchy. Stay with them. Do not burn! Remove seeds from the pan immediately. (Delicious!)

BAKING: Pre-heat oven to 350. º Place seeds on the baking sheet in the oven, close the door and toast for 10 minutes. Open oven door. Pull out baking sheet and gently stir the seeds. Toast five more minutes. (Set timer.) Taste a seed. Toast until seeds are light brown and crunchy. Put into a bowl to cool, then to a glass jar until ready to munch on or use in a recipe.

 

1/2 cup broccoli- tiny flowerettes, blanched

1 pound fresh, chilled, firm organic tofu, water packed

1/2 teaspoon sea salt

2 teaspoons sesame or olive oil

1 cup yellow onion, minced

1/2 cup carrots, minced

1/2 cup yellow corn kernels

1/2 teaspoon turmeric for golden color

1 scallion, thinly sliced

• Blanch broccoli tops (bite-sized flowerettes,) in boiling water for 2 minutes. Run under cool water, drain. Set aside until later as a bright green garnish.

• Cool broccoli under cold water. Drain. Set aside.

• Drain tofu well and place in a mixing bowl with sea salt.

• Whisk or break up gently with spoon or hands, keeping tofu in chunks.

• Heat oil on low in a skillet and add onion.

• Sauté until onions are transparent.

• Add carrot and corn; sauté one minute.

• Add the tofu and sprinkle turmeric. Mix well to distribute the color.

• Sauté 8 minutes until mixture is combined and boils gently.

• Keep covered. Turn off heat.

• Place on serving platter when ready to eat.

• Garnish the top with broccoli flowerettes and scallions.

• Serve warm, as you would scrambled eggs.

 

WHEAT— FREE PANCAKES with

GOLDEN MILLET AND POLENTA

Millet is a very warming whole grain, especially healthful for the pancreas and spleen, the organs that help balance blood sugar. Millet, golden and mild, satisfying and delicious, is the only completely alkaline grain. The corn grits help to solidify the millet and add a wonderful texture, as well as a delicious corn flavor. Makes about 12-15 3-inch pancakes.

6 cups water

1 cup millet, washed

1 cup yellow corn grits (no need to rinse)

1 tsp. sea salt

1 Tablespoon olive oil, more for oiling baking sheet

• Bring water to a boil adding sea salt and oil.

• Whisk in millet, then corn grits.

• Reduce heat, cover and adjust to low boil or simmer.

• Stir well every 5 minutes. Careful not to burn bottom! Set a timer.

• Cook until all water has been absorbed and grains are soft and combined. About 40 minutes. (Great as is, for porridge too.)

• Turn off heat.

• Brush a baking sheet with olive oil.

• With a damp wooden spoon, spread out the cooked millet-polenta onto the baking sheet so that it is one inch thick and smooth on top.

• Let set to cool completely- about 20 minutes, or set in fridge. You can also do this the day ahead and refrigerate, covered tightly.

• Cut circles out of the millet-polenta, approximately 3 inches in diameter (as you would do a cookie-cutter method.) I use an inverted glass or other circular cooking tool.

• Gather the extra ends together and flatten to cut more grain pancakes or eat the grain in a porridge or soup.

• Place a thin coating of olive oil in a skillet. On medium heat, warm several pancakes in the pan, turning once to heat through. Serve hot or set in oven to keep warm.

• Preheat oven to 250º Using your oiled baking sheet, set pancakes in to stay warm if you have extra.

• Keep pancakes warm until time to serve.

• Pour the glaze of warm brown rice syrup with berries or cinnamon on top. Serve extra in bowl.

 

MAPLE BERRY GLAZE

1 cup organic maple syrup

3/4 cup blueberries, or other berries, rinsed

Warm the syrup in a small pot; do not boil. Add the berries and stir.

Turn off heat. Serve berry syrup warm, poured over the pancakes or let guests pour on with a ladle.

 

PUMPKIN SPICED MAPLE LATTE

We love warm beverages, especially in cooler autumn weather, because they are soothing to our stomachs, our blood, and even our moods. They help us acclimate to the weather, to balance, and to feel good.

Delicious with creamy organic almond milk, pumpkin spice, and healthy sweetener. This latte is easy to make too! Use your favorite nut milk and sweetener to your taste. One Serving.

1 Tablespoon maple syrup

2 Tablespoons pumpkin puree

1/2 teaspoon pumpkin pie spice mix

1/2 cup unsweetened nut milk

1/2 cup grain coffee or coffee

• Pour maple syrup and pumpkin puree in a pot

• Heat slowly.

• Stir or whisk well. Add the pumpkin pie spice.

• Slowly add the nut milk, stirring.

• Warm but do not bring to boil.

• Add the coffee, stir. Heat until it steams.

• Continue stirring.

• Taste and adjust seasoning to suit you.

• Pour very warm latte into a mug and add vegan whipped cream and a dusting of the pumpkin pie spice or cinnamon on top.
